Quick Stir Fry

Stir Fry – Brown rice with Kale, Peas, Tomato, and some Tofu all fried up with some Whole Foods Soy Ginger Sauce. It was really good, I love this sauce! The I enjoyed a pear as my lunch dessert.

Chinese Five Powder Spice Baked Tofu

1 block firm tofu, drained, pressed for 30 minutes, and cut into 8 slices
1/2 cup water
3 tbsp soy sauce
1 tsp lemon juice
1 tbsp EVOO
1 tsp Chinese Five Powder Spice

Mix together above in the baking dish and set the slices in, flip slices to coat. Bake at 350 degrees for 30-45 minutes, flip and repeat. I covered them for the first 30 minutes to keep moisture in, then took the foil off for the last half.

Baked Tofu

Baked tofu is a great way to make tofu, and it can be added to almost any dish.

The recipe:

3 TBSP Soy Sauce

3 TBSP Water

2 TBSP EVOO

4 TBSP Lemon Juice (fresh)

1 miced Garlic Clove

2 TSP Basil

1 TSP Thyme

1 TSP Oregano

1 pound Firm Tofu, drained and pressed

I pressed the tofu for about 30-60 minutes, then sliced it into about 9 pieces. Mixed mariade ingredients together in a glass baking dish and set the slices in. Refrigerated and then turned pieces after 30 minutes. 30 minutes later I baked in the oven (375 degrees) and turned tofu after about 20 minutes. I think I baked them for somewhere between 45-60 minutes. They turned out great! I love baked tofu.
