Baked Oatmeal

When The Sister was in town last weekend we made Baked Oatmeal. This is a relatively quick and hearty dish.

Preheat oven to 375F

1/2 cup homestyle oats

1/2 cup vanilla soymilk (or any non-dairy milk)

Soak oats with the milk until the oven is ready.

Stir in another 1/2 cup milk, 1 tbsp ground flaxseeds, 2tbsp sliced almonds, and 1/2 cup blueberries.

Bake for about 30 minutes, top with any (or all, or anything else that fits your mood) of the following; more soymilk, banana slices, cinnamon, nutmegs, brown sugar, maple syrup, jam, peanut butter, etc…

Mine below is with more soymilk, banana’s, cinnamon, nutmeg, and brown sugar. The Sister opted for maple syrup and soymilk.

Oatmeal

Oatmealness

One of my fav ways of making oatmeal is to eat it with PB added to it. Well, I only had about a tablespoon left in the jar so I used it to make my weekend oatmeal. Add 1/2 cup oats, 1 cup vanilla soymilk, 1 tbsp flaxseeds and a banana on the side. Really flippin’ good stuff!

Race Day Oatmeal

Nothing has fueled me better than my oatmeal on the morning of a race…specifically old fashioned oats, vanilla soymilk…cook the oatmeal until soft and then stir in 2 tbsp peanut butter and some fruit (this time I did banana…dried cranberries and dried blueberries have also been good).

Pumpkin Oatmeal

I love pumpkin and one quick and easy dish is Pumpkin Oatmeal.

1/2 cup quick oats
1/4 cup rice milk
1/4 cup water
1/4 cup canned pumpkin
1 tbsp ground flex seed
1 tbsp wheat germ
1 tbsp brown sugar
Mix and put in microwave for 2 minutes or until it reaches the right thickness.
It was so yummy!!

Homemade “Instant” Oatmeal

I like to make my own instant oatmeal, for two reasons…one it’s really good/healthy and you can control the sugar content. Here’s one version:

1/4 cup quick oats
1 tbsp wheat germ
1 tbsp ground flaxseeds
1 tbsp brown sugar

I just put all the ingredients into a ziploc baggie and put it in the freezer until I’m ready to eat it. (Freezer?? to keep the flaxseeds as fresh as possible) You cna also mix in anything else you like. Some things I’ve added is a teaspoon of cinnamon and handful of dried cranberries. Almonds and vanilla, or just some banana slices, it’s practically limitless. When you’re ready to eat just add boiling water to mix in a cup and enjoy! I eat oatmeal almost every day and this is a nice quick way to eat it.
