Banana Chocolate Chip Muffin Bars

Ingredients:

1 cup flour
0.75 tsp baking soda
0.25 tsp salt
1/2 cup chocolate chips
0.5 cup sugar
0.25 cup canola oil
0.25 cup water
2 very well mashed and very ripe banana’s
0.5 tsp vanilla

Method:
Preheat the oven to 350 degrees and spray an 8×8 pan with nonstick spray. Sift together the dry ingredients (except sugar) in a large bowl, stir in the chocolate chips. Combine the wet ingreidnts until mixed well, add them to the dry until the batter is just combined. Pour into the prepared pan and bake 20 to 30 minutes until a toothpick comes out clean and the top is lightly browned.

Banana Oatmeal Muffins

3 ripe bananas – mashed
1/3 cup canola oil
1/2 cup whole wheat flour
1/2 cup unbleached all-purpose flour
1/2 cup quick oats
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Preheat oven to 375F and grease 12 muffin cups. Mash bananas well and mix in the oil and sugar. Sift together flours, baking soda, baking powder, and salt. Stir into the banana mixture along with the oats, mixing until combined. Fill muffin cups 2/3 full. Bake 15-20 minutes, until a toothpick comes out clean.

Makes 12 muffins.

Cocoa Strawberry Muffins

These muffins were a huge hit with my friends…it was all I could do to keep a few aside for myself!

Cocoa Strawberry Muffins:

1 cup almond milk

1 tsp apple cider vinegar

1 1/2 cup flour

1/3 cup cocoa powder

1/2 cup sugar

2 tsp baking powder

1/4 tsp salt

1 tsp vanilla

1/4 tsp almond extract

2 tbsp apple sauce

1/3 cup canola oil

15 oz strawberries

Chocolate Chip Muffins

recipe:

1 3/4 cup all purpose flour

1/4 cup sugar

1 tbsp baking powder

1/4 tsp salt

1/3 cup canola oil

3/4 cup soymilk

6 oz soy yogurt

1 tsp vanilla

1 cup chocolate chips

Preheat oven to 400 Degrees. Sift together dry ingredients in a large bowl. In a separate bowl whisk together the wet ingredients. Fold into the dry and then stir in the chocolate chips. Fill prepare muffin cups 2/3 full and bake 20-25 minutes, until a tooth pick comes out clean.

Mocha Banana Chip Muffins

Mocha Banana Chip Muffins, which I call crack, and I made these for my race last weekend. Healthy and caffeinated…awesome.

3 ripe banana’s, mashed

1/3 cup unsweetened applesauce

3/4 cup sugar

2 tbsp instant coffee mixed with 1/4 cup warm water

2 cups unbleached all purpose flour

1 1/2 tsp baking soda

1/2 tsp salt

1 cup semi-sweet chocolate chips

Preheat oven to 350F and grease muffin cups (I made about 24 muffins with this, smaller muffins). Mixed together wet ingredients and then sift in the dry ingredients. Combined and then stir in the chocolate chips.  Fill cups about 1/2-2/3 full, bake about 20 minutes, until toothpick comes out clean.
